About Spirulina
Spirulina is a fresh water blue-green algae super food that has been consumed as a food for centuries. Spirulina is a rich source of proteins (60% of its biomass) and other nutrients. It can be quite useful for health conscious people as it is a complete food in itself.
Spirulina also contain phycocyanin(10-20% by weight) which contains a pigment "Phycobilins" which causes its blue color. This phycocyanin is used as a major source of blue color used in food, beverage and other industries. Phycocyanin has certain anti-oxidant properties.
